Beet It! Beet It!

You want to know what makes you feel very crafty in the kitch and down right good about your skills? Making beet chips. I don’t say things I don’t mean. If you own a mandoline (which if you don’t, you should), stop by the farmers market and pick up some colorful beets (any kind of beet will do) and slice up those beets as thin as you can, add some olive oil & celtic salt, lay them on parchment paper and set the oven to 375. Keep a close eye on them since the sugar in the beets can burn quickly and be mentally prepared for them to get really small (I was surprised). After about 15 minutes, depending on your oven (mine’s terrible), take them out and serve immediately! Enjoy.
